Pulled “pork” salat

Dette er en rett vi har spist mye av i hverdagen. Først med ferdig kjøpt pulled pork fra butikken, men de siste årene har vi erstattet dette med veganske alternativer som f eks “Oumph” eller veganske strimler. Hva du ønsker å bruke her er altså helt opp til deg, men det er fullt mulig å lage dette som en vegetarisk versjon.

Tid: 15 minutter (evt 30 dersom du lager pulled pork)

For 2 personer:

En pakke Oumph eller en pakke pulled pork

Ca 0,5 dl BBQ-saus

1 avocado

1 rødløk

Salatblanding

En neve cashewnøtter

1/2 agurk

Dressing:

100 gram blåmuggost

1/2 dl eddik

1/2 olivenolje

1,5 dl rømme

1 hvitløksfedd

1 ss sennep

Pepper

Oppskriften er ganske “straight forward”: stek Oumphen eller pulled pork etter pakningsvedlegget.

I mens hakker du opp alle grønnsakene til salaten. Her kan du ha i akkurat det du vil også, men dette er den blandingen jeg hadde for hånden mens jeg lagde retten.

Når det er 5 minutter igjen av steketiden, ha over BBQ-sausen. Dressingen lages ved å ha alt i en miksmaster og blande. Bland alt sammen sammen og server med brød om du ønsker.

ENGLISH VERSION

Pulled “pork” salad

This is a dish we have eaten a lot of over the years. In the beginning we made it with store bought pulled pork, but the last couple of years we’ve made them with vegan substitutes. What you want to use is up to you, but you can make this as a vegetarian dish.

Time: 15 minutes (30 if you are making pulled pork)

For 2 people:

1 pack of vegan beef strips or pulled pork

0,5 dl BBQ-sauce

1 avocado

1 red onion

Salad mix

1 handful cashew nuts

1/2 cucumber

Dressing:

100 gram blue cheese

1/2 dl vinegar

1/2 olive oil

1,5 dl sour cream

1 clove of onion

1 tbs mustard

Pepper

The recipe is pretty straight forward: cook the “beef” strips or pulled pork after packet instruction.

In the mean time chop up the veggies. You can use whatever vegetables you want, but this is what I had at hand the last time I made it.

When it’s 5 minutes left of the meat pour over the BBQ-sauce. Make the dressing by blending the ingredients together in a mix master. Toss everything together and serve with bread if you want.
